I as Irish stew

Irish stew recipe by our ambassador Roberta:

Ingredients:
  • 4 potatoes
  • 2 small onions
  • 2 carrots
  • 500 gr. of lamb
  • parsley
  • thyme
  • salt
Preparation:
Peel the potatoes and cut in small pieces. Peel and slice the onions and carrots also. On the bottom of a casserole dish place a layer of potatoes, then one of the onions and carrots. Arrange the pieces of meat over the vegetables, salted and seasoned with chopped parsley and thyme. Add salt and continue with another layer of onions and potatoes last. Cover with cold water and place the pan on the flame discovery. At a time when the water comes to a boil, cover the pan and simmer covered for about an hour and a half, basting necessary if the stew were too dry.

In our cooking trip around the European Community countries, Irish stew represents Ireland.
Ireland is an island to the north-west of continental Europe. It is the third-largest island in Europe and the twentieth-largest island on Earth. To its east is the larger island of Great Britain, from which it is separated by the Irish Sea. Politically, Ireland is divided between the Republic of Ireland, which covers just under five-sixths of the island, and Northern Ireland, a part of the United Kingdom, which covers the remaining area and is located in the north-east of the island. The population of Ireland is approximately 6.4 million. Just under 4.6 million live in the Republic of Ireland and just over 1.8 million live in Northern Ireland.
