K as Kalakukko


Kalakukko recipe by our ambassador Tamara:

Ingredients:
  • dough 
    • 200 gr. rye flour
    • 200 gr. flour 0
    • 50 gr. melted butter
    • water
  • filling
    • 600 gr. cod fillets
    • 200 gr. of bacon or 4/5 peeled king prawns
    • herbs
    • a handful of common rice
Preparation:
To prepare the dough, work the ingredients until dough is elastic and smooth. Then put it in the refrigerator.
The night before prepared fillets: wash them and put them in a bowl with peeled king prawns and seasoned with salt, pepper, sweet paprika, various herbs, parsley, mint, basil, pink pepper grains and the rigalimoni many beautiful hulls of a lemon bio, and also the juice. Cover and refrigerate until the next day.
Roll out the dough giving it an oval shape, leaving it thicker in the center where you will put a handful of rice to absorb the liquid. Then place the mix of cod and prawns, close to the envelope, well leveled with the blade of a knife wet folds and bake at 250 degrees for 30/40 minutes. Remove it from the oven and baste with a knob of butter. Place it on a sheet of aluminum and put in oven, lowering the temperature to 120 ° for 6 hours.
