The Canja de Galinha recipe by our ambassador Patrizia

Ingredients:
  • 2 l. of chicken stock
  • chicken
  • 1 onion
  • clove
  • rice
  • juice of 1 lemon
  • fresh mint 
Preparation:
Prepare the chicken stock with onion and some cloves. Fillet the chicken, cut it and stay it in a warm place. Filter the stock to be clear and transparent. Put the rice and cook. When the rice is ready, put the chicken, the lemon juice and the mint. Serve hot with some mint leaves.



In our cooking trip around the European Community countries, the Canja represents Portugal.
Portugal, officially the Portuguese Republic, is a country located in Southwestern Europe, on the Iberian Peninsula. It is the westernmost country of mainland Europe, and is bordered by the Atlantic Ocean to the west and south and by Spain to the north and east. Apart from continental Portugal, the Portuguese Republic holds sovereignty over the Atlantic archipelagos of Azores and Madeira, which are autonomous regions of Portugal. The country is named after its second largest city, Porto, whose Latin name was Portus Cale. It is the only known country in the world that is named after its second largest city.
